Seared Salmon with Arugula and Fennel Salad

Ingredients

Salad:
1 bunch arugula (washed)
ΒΌ  head fennel (shaved)
Sea salt to taste
1 lemon halved
3oz olive oil

METHOD:
Mix the salad together except for the oil, salt, and lemon

Salmon:
2 salmon fillets
Sea salt

METHOD:
Get pan hot (smoking)
Season and place salmon on grill cook 3-4min on each side then set aside and rest
Mix all the salad with the salt, oil and squeeze the lemon one half at a time to your liking
Place salmon on plate and top with salad
